2018 Twenty Seven Fathoms Cabernet Sauvignon
2018 VINTAGE
The 2018 vintage began with an extremely dry winter followed by abundant (and much needed) rainfall in March and April. Cool spring and summer temperatures delayed budbreak by as much as two weeks throughout the Valley and pushed veraison into late June and early July. August and September continued with consistently cooler temperatures allowing a longer hangtime for the grapes to develop on the vine. As we finally inched towards harvest, the near-perfect weather gave us plenty of time to pick at optimal ripeness. Yields were larger than previous vintages and the fruit was bright and concentrated with lush tannins.
TASTING NOTES
This deep rich Cabernet Sauvignon expresses the regal attributes one might expect from the outstanding 2018 vintage. Complex aromatics of Valrhona chocolate, blackberry, black tea, sassafras, black licorice, and blueberry pie. After a few swirls of the glass, aromas of plum, toasted oak, black olive, and dark cherry emerge. The first sip echoes the aromatics with a smooth, round and full entry on the palate. A silky texture accentuates flavors of luscious ripe fruit, baking spice and vanilla bean. A lush and juicy fruit-focused core is supported by velvety tannins and balanced acidity. Full-bodied yet elegant, this powerful wine has supple tannins and a long lingering finish of black cherries, cinnamon, and a touch of sweet vanilla.
